The work is practical and closely supervised. Each lot is identified on arrival, prepared to the buyer's specification and kept frozen until loading.

Catch arrives from local boats and is sorted by species and size before entering the plant.
The lot is weighed, identified and checked for temperature and condition.
Cleaning, grading, cutting and portioning follow the format agreed with the buyer.
Weight, appearance, temperature and pack format are reviewed before the case is closed.
Finished cases move into controlled storage while the order and documents are completed.
Product leaves the cold room for container loading and export to the agreed destination.
